Baked Eggs In Tomato Cups
Ingredients:
- 6 large tomatoes,
- 2 tbsp olive oil,
- 1 tbs dried thyme,
- 3 cloves garlic, sliced,
- 6 large eggs,
- salt and pepper.
Instructions:
- Preheat oven to 400°F.
- Slice of tops of tomatoes and scoop out pulp and seeds.
- Place tomatoes on baking sheet, drizzle with oil, place garlic slices inside them and season with salt pepper and thyme.
- Next crack in eggs, then season again with salt, pepper and thyme.
- Bake in the oven for 10 – 15 minutes. (depending on how you prefer your yolk).
