Ingredients:

  • 6 large tomatoes,
  • 2 tbsp olive oil,
  • 1 tbs dried thyme,
  • 3 cloves garlic, sliced,
  • 6 large eggs,
  • salt and pepper.

Instructions:

  1. Preheat oven to 400°F.
  2. Slice of tops of tomatoes and scoop out pulp and seeds.
  3. Place tomatoes on baking sheet, drizzle with oil, place garlic slices inside them and season with salt pepper and thyme.
  4. Next crack in eggs, then season again with salt, pepper and thyme.
  5. Bake in the oven for 10 – 15 minutes. (depending on how you prefer your yolk).
