Banana Blueberry Pancakes

Simple and easy recipe for gluten-free pancakes, made only with 3 ingredients!

Ingredients:

  • 1 egg,
  • 1 banana,
  • a couple of blueberries,

Instructions:

  1. In a medium sized bowl combine together egg with banana. Using a fork mash the banana.
  2. Fold in a couple of blueberries, try not to smash them.
  3. Drizzle a little oil to a preheated skillet and using a tablespoon add the batter. Try to make small pancakes, they will be easier to flip.
  4. Cook for 2-3 minutes on each side.
  5. Serve with maple syrup.
