Berry Chia Muffins
Tasty and healthy berry muffins, quick and easy to make. Give them a try!
Ingredients:
- 1 large egg,
- 1/4 cup sugar,
- 1 cup plain nonfat yogurt,
- 2 tbsp. honey,
- 3 tbsp. vegetable oil,
- 1 ounce vanilla sugar (or 1 tsp vanilla extract),
- 1/4 tsp. ground cinnamon,
- 2 tbsp. fresh lemon juice,
- zest from one lemon,
- 1 1/2 cups all purpose flour,
- 1 1/2 tsp. baking powder,
- 1/4 tsp. baking soda,
- 1/4 tsp. salt,
- 1 1/2 cups mixed berries (15 ounces/450g),
- 2 tbsp. chia seeds.
Preparation:
- Preheat oven to 375F. Spray muffin pan with nonstick cooking spray.
