Berry Chia Muffins

Ingredients:

  • 1 large egg,
  • 1/4 cup sugar,
  • 1 cup plain nonfat yogurt,
  • 2 tbsp. honey,
  • 3 tbsp. vegetable oil,
  • 1 ounce vanilla sugar (or 1 tsp vanilla extract),
  • 1/4 tsp. ground cinnamon,
  • 2 tbsp. fresh lemon juice,
  • zest from one lemon,
  • 1 1/2 cups all purpose flour,
  • 1 1/2 tsp. baking powder,
  • 1/4 tsp. baking soda,
  • 1/4 tsp. salt,
  •  1 1/2 cups mixed berries (15 ounces/450g),
  • 2 tbsp. chia seeds.

Preparation:

  1. Preheat oven to 375F. Spray muffin pan with nonstick cooking spray.
