Corn Fritters

I can’t wait for the corn season. In my opinion, corn tastes best boiled and lightly coated with fresh butter. So today I decided in part to satisfy my craving for it by making fritters with basil and canned corn. These fritters can also serve as bread.

Just add a slice of tomato, ham and cheese and there you have it, a sandwich. Next time I’ll try to make grilled sandwiches using them 🙂



  • 1/2 cup flour,
  • 1/2 cup milk,
  • 2 large eggs,
  • 1/2 tsp baking powder,
  • 1 tbsp olive oil,
  • 1/2 tsp salt,
  • pepper to taste,
  • 2 cups corn kernels,
  • 1/2 cup chopped fresh basil.
