Diet Coke Chicken



  • 4 chicken thighs (don’t make my mistake, remove the skin),
  • 1 can diet coke,
  • 1/4 cup tomato paste,
  • 1 tbsp Worcestershire sauce,
  • salt and pepper to taste.



  1. Preheat oven to 375°F,
  2. Place the chicken into a baking dish, season with salt and pepper and bake for 15 minutes.
  3. Pour the diet coke into a large frying pan/sauce pan and place over medium-high heat. Add tomato paste and Worcestershire sauce. Stirr well and let the sauce reduce to half.
  4. After chicken has cooked for 15 minutes, pour the reduced sauce over the chicken and return to the oven. Roast for 20-30 minutes, basting with sauce if necessary.
