Diet Coke Chicken
Ingredients:
- 4 chicken thighs (don’t make my mistake, remove the skin),
- 1 can diet coke,
- 1/4 cup tomato paste,
- 1 tbsp Worcestershire sauce,
- salt and pepper to taste.
Instructions:
- Preheat oven to 375°F,
- Place the chicken into a baking dish, season with salt and pepper and bake for 15 minutes.
- Pour the diet coke into a large frying pan/sauce pan and place over medium-high heat. Add tomato paste and Worcestershire sauce. Stirr well and let the sauce reduce to half.
- After chicken has cooked for 15 minutes, pour the reduced sauce over the chicken and return to the oven. Roast for 20-30 minutes, basting with sauce if necessary.
