Healthy casserole for two

What do you do when your partner is eating healthy? It’s obvious that you have to adjust. This delicious roasted chicken with vegetables is an ideal dietary dish full of vitamins and protein. I don’t know about you, but I love the taste of roasted chicken with thyme. To me, this herb has something addictive in it.

Anyways, we’re not here to talk about me, but about this very simple recipe. The charm of this dish is that you can use any vegetables you’d like and you don’t have to strictly use what I’m suggesting. Next time I’ll try to diversify this dish even more, despite the fact that I love zucchini in all its forms. Maybe I’ll try it with squash and pumpkin? 🙂

Ingredients:

  • 2 skinless, boneless, chicken breasts,
  • 1 medium sized zucchini,
  • 1 medium sized yellow zucchini,
  • 1 broccoli,
  • 1 medium sized carrot,
  • 1 onion, cut into small wedges,
  • 1 tsp herb de provence,
  • 1 tsp dried thyme (+ 1/2 tsp for chicken breasts)
  • 1/2 tsp garlic powder,
  • salt and pepper to taste.
