Mexican Rice

Ingredients:

  • 1 can chopped tomatoes,
  • 2 cups long grain rice,
  • 2 tbsp butter,
  • 1/4 cup canola oil,
  • 2 cloves garlic, minced,
  • 1 tsp salt,
  • 1/4 tsp cumin
  • 30 ounces chicken stock.

Instructions:

  1. In a large skillet heat butter and oil over medium heat.
  2. Add in rice and cook for 2 minutes, until lightly golden brown. Stir frequently.
  3. Add in minced garlic, salt and cumin and cook for 1 minute, stirring.
  4. Stir in chopped tomatoes and chicken stock.
  5. Bring to a boil and reduce heat to low.
  6. Cover and let simmer for 20-30 minutes or until all liquid is absorbed and rice is tender.
