Pineapple is the only fruit that I can eat without limits and in any form. Some of my friends laugh at the fact that whenever we’re in a pizzeria, I order a small Hawaiian pizza. For me, pineapple is the best ingredient for salty dishes. I could even eat it wrapped in Parma ham! That’s all I need 🙂
Following in the footsteps of the Hawaiian pizza, I decided to make grilled chicken breast, marinated in pineapple, barbecue sauce and ketchup marinade. The sweet and slightly tart chicken with a distinct smoky flavor was perfect for my taste buds. The addition of grilled pineapple slices completely delighted me. I love this recipe 🙂
- 2 boneless, skinless, chicken breasts,
- 1 cup barbecue sauce,
- 1/2 cup pineapple juice,
- 2 tbsp tomato ketchup,
- 4 round pineapple slices.
