Wonderfully green pasta made with avocado and spinach. It only takes minutes to prepare this dish, and the taste is so worth it! You can substitute spinach with basil, add some tomatoes and there’s another dish! 🙂
- 2 garlic cloves,
- handul of spinach,
- 1 avocado,
- 2 tbsp lemon juice,
- 1 tbsp olive oil,
- 1/2 pound pasta,
- pepper, salt to taste.
- Boil the pasta as per package instructions. Drain it.
- Heat a small pan and add a tsp of olive oil. Sautee garlic with spinach until cooked, about 2 minutes.
- Using a food processor or blender pulse the spinach with ripe avocado, olive oil, pepper and lemon juice. Blend till creamy. Mix this creamy mixture with cooked pasta, add salt to taste and serve immediately.
