Taquitos inspired Easy Oven-Baked Tortillas
Ingredients:
- 8-12 small flour tortillas,
- 2 chicken breasts, cooked and shredded.
- 1 small onion, chopped,
- 1 large garlic clove, minced,
- pinch of salt and pepper,
- 1/2 tsp chili powder,
- 1 cup shredded cheese,
- 2 tbsp canola oil.
Instructions:
- In a skillet place the onion and cook for 2 minutes on canola oil. Next add garlic and shredded chicken. Add salt pepper and chili powder.
- Cook for 5 minutes more, until the onions are tender and translucent.
- Remove from heat and allow to cool to the touch.
- Place about 3 tbsp of meat in the center of the tortilla, across the tortilla, next add a little bit of shredded cheese.
- Fold the tortilla in halve over the meat, the roll tightly.
- Repeat with all remaining tortillas.
- Place them in the oven for 12-15 minutes, until lightly browned and crunchy.
- Serve with guacamole, salsa or sour cream.
