Tex-Mex Black Bean Corn Quinoa Salad
Simple, filling quinoa salad. Made with black beans, corn, green onions, baby spinach, cilantro, cheddar cheese, feta cheese and red pepperoni pepper. Ideal salad for your bbq party. The taste of cumin-lime dressing elevates this salad to a near masterpiece! After I made this for the first time, I felt in love with it. Now, every saturday this salad is on my table. My guests also love it 🙂
Ingredients:
- 1 1/2 cups quinoa, uncooked,
- 1/2 cup white cheddar cheese cubes,
- 1/2 cup feta cheese cubes,
- 1 (15 oz) can black beans, drained and rinsed,
- 1 (15 oz) can sweet yellow corn, drained and rinsed,
- 1 cup baby spinach, chopped,
- 1 bunch of green onions, thinly sliced,
- 1/2 cup cilantro, chopped,
- 1 red pepperoni pepper, seeded and deveined, thinly sliced
For the dressing
- 1/2 cup lime juice (2 limes),
- 2 tbsp red wine vinegar,
- 2 tbsp olive oil,
- 1 tbsp honey,
- 2 tsp cumin (use powdered if you have),
- 1 tsp chili powder,
- salt and pepper to taste.
