Vegan Bean and Oats Burgers
I recently had to think of something to cook for my vegan friend. I spent a long time wondering what to prepare for her. Something that wouldn’t be a simple vegetable casserole, something that wouldn’t stand out from the dishes served that evening to other friends attending dinner. Since I was making beef burgers for the others, why not try making a vegan version?
I’ll explain: this recipe calls for a traditional hamburger bun, that’s why it’s not a strictly vegan recipe. In the original, I used buns without any ingredients of animal origin. But both versions were delicious. A perfect composition of flavor, filling black beans and pinto beans, perfectly accentuated Dijon mustard, Roman cumin and chili. I even managed to sneak a carrot in! The main binding ingredient in this burger is instant oatmeal. Next time I’ll try to make a gluten-free version 🙂
Ingredients:
- 1 can pinto beans,
- 1 cup black beans,
- 1 1/2 cup quick-cooking oats,
- 1 carrot, grated,
- 1 onion, chopped,
- 4 garlic cloves, minced,
- 2 tbsp soy sauce,
- 2 tbsp Dijon mustard,
- 1 tbsp tomato ketchup,
- 1 tsp ground cumin,
- 1 1/2 tsp chili powder,
- salt and pepper to taste.
